La Salada – VINYA D’EN JEP 2022

Toni Carbo is a fourth-generation winemaker who established La Salada in 2012. Over a decade ago, Toni inherited his family’s vineyards and decided to farm organically. He cultivates 28 hectares of vineyards without the use of any chemicals. A significant number of the vines he grows are over 80 years old. In the cellar, he follows his family’s traditions and does not add any chemicals. Toni’s work is appreciated by many naturalakers from France, who visit him (radical) winem to buy grapes, as they share a similar philosophy towards responsible farming.

“Vinya d’en Jep” is an expressive, full of life and freshness, dry red biodynamic wine made from Garnacha grapes from the youngest vineyards of La Salada. Garnacha Negra appears here in a very fruity and naturalistic interpretation. Harvesting is done manually. 70% of the grapes are vinified as whole bunches, 30% are separated from the stems. After 8 days of maceration and spontaneous fermentation with natural yeast cultures, the wine is aged for 7 months in stainless steel containers. Before bottling, the wine is not filtered or refined, and no sulfur is added.
