This Etna Bianco SUP CRU is the highest quality expression from the SRC family farm. It comes from the specific Contrada of Rinazzo, where the grapes grow on the northern slopes of Etna. The wine is made mainly from the local Carricante grape (which is famous for its elegance and acidity) from very old vines. After spontaneous fermentation, the wine is aged in cement tanks to gain depth but maintain the purity characteristic of the volcanic soil.
Taste? The wine is dry, powerful and extremely mineral. It is dominated by citrus fruits (lime, grapefruit peel) and herbal notes that intertwine with hints of volcanic rock and salt. The Carricante grape gives it a striking but elegant acidity and a very long, precise aftertaste.
How to serve? Serve chilled (around 10-12°C). This is a serious gastronomic wine. Pair with complex fish dishes (e.g. tuna, monkfish), seafood or truffles, and mushroom risotto.
