This isn’t your typical vermouth. VIMUT is a natural take on vermouth from the biodynamic Finca Parera estate, bottled in 1-liter format. Its base is natural wine (a blend of Xarel·lo, Chardonnay, and Sumoll) that’s aged for 6 months in concrete tanks together with various local herbs. Crucially, it’s fortified with alcohol distilled on the estate itself (from Xarel·lo grapes) and, instead of sugar, balanced with 5% natural honey from their own hives.
Flavor? The aroma is very herbaceous but not overpowering—dominated by wild Mediterranean herbs, vanilla, and spices. The palate is dry, herbal, and refreshing, with a subtle touch of honeyed sweetness for balance. It’s an excellent, clean, and natural vermouth that isn’t “heavy” or syrupy.
How to serve? Serve chilled with an ice cube and an orange or lemon twist. It’s the perfect pre-dinner aperitif. It also works beautifully in classic cocktails like the Negroni.
