Description

“Shiva” is the name of a powerful god symbolizing transformation, and this wine is Aldo Viola’s meditation on time. Aldo Viola is one of Sicily’s natural wine masters, working biodynamically and without added sulfites. This wine is the pinnacle of orange wine: 100% local Catarratto grapes, macerated (kept with the skins) for 4 or more months. The wine is aged in large barrels for maximum concentration and longevity.

The taste? The wine is dry, robust, and has an incredibly deep structure. It is dominated by notes of salted caramel, dried apricots, exotic spices, and earth. Due to the long maceration, it has firm but pleasant tannins (like red wine) and a long, deep, salty-mineral aftertaste.

How to serve? Important: Serve not too cold (around 14–16 °C). Decant before tasting (at least 1 hour) to allow the aromas to develop. This is a serious, meditative, gastronomic wine. Pair with aged cheeses, braised meats, or spicier dishes.
