Gabrio Bini, an architect turned winemaker, is a legend in the world of natural wine. His farm, Serraghia, is located on the volcanic island of Pantelleria (Sicily). The Riserva Giotto wine is the artist’s tribute, made from 100% local Pignatello (Alicante) grapes, grown biodynamically on volcanic terraces. It is a zero-zero wine: fermented and aged in terracotta amphorae buried in the ground, without any intervention or added sulfites.
The taste? The wine is dry, powerful, and has incredible depth. It is dominated by tart red berries (cranberries, cherries), complemented by bright earthy (lava), smoky and herbal notes. Due to the long maceration in amphorae, it has a firm but soft tannin structure and a long, salty-mineral finish.
How to serve? Serve slightly chilled (around 16-18 °C). Decanting is necessary to reveal the full palette of the wine. This is an excellent gastronomic wine for serious dishes. Pair with mushroom dishes, lamb, stews, or aged cheeses.
