Description

Octave is a joint project between French natural wine legend Patrick Bouju and Greek winemaker Jason Ligas, born on the volcanic island of Samos, Greece. This wine is 100% Muscat Petit Grain, grown biodynamically on granite and basalt soils. It is natural wine in the purest sense: it is fermented naturally and aged in amphorae and concrete eggs to extract maximum minerality. The wine is bottled unfiltered and without any added sulfites.

Taste? Although it is a Muscat grape (which is often sweet), this wine is completely dry, powerful and energetic. The aroma is complex – in it floral notes are replaced by ripe yellow fruits, sweet spices and hints of resin (pine). The taste is dense, vibrant, with incredible volcanic minerality and a saltiness that reminds of a sea breeze.

How to serve? Serve chilled (around 10-12°C) in a wine glass. Due to its richness and saltiness, this is a great gastronomic wine. Pair with seafood (oysters, fried squid), smoked fish or poultry dishes with citrus sauces.
