Nuit Blanche (lit. “Sleepless Night”) is not a light summer wine, but a serious, natural, and biodynamic white wine from the sunny Roussillon region of France. It is made from old Macabeu and Grenache Blanc grapes grown on clay and limestone soil. The wine is naturally fermented and aged in old oak barrels, which give it richness and complexity.
The taste? The wine is rich, dry, and has a complex aroma. It is dominated by ripe yellow fruits (peaches, pears, baked apples), complemented by notes of smoke, nuts, and light spices from barrel aging. This is a wine with a strong character, a pleasant texture, and a long finish.
How to serve? Serve slightly chilled (around 10–12 °C) to allow its aromas to unfold. Due to its richness, it is an excellent gastronomic wine. Pair with roasted chicken, fattier fish dishes (e.g., with cream sauce) or aged hard cheeses.
