La Cave aux Fioles – Départ en Vacances

La Cave aux Fioles, it’s in Rivesaltes, south of France, Roussillon and nowhere else. Since 2018, winemaker works alone, with passion and respect for the nature of the farm called “Mas Vespeilles”. His small plots of old vines are on a windy, dry clay and limestone terroir. Most of the wines are Natural (with non added sulfits) certified organic, and excited to begin with the biodynamic agriculture. The commitments are on low yields, manual haverst and soft vinifications to respect the quality of the grappes. They produce the wine they love to drink: handicraft, beloved and without any chemical influence.

Fine and delicate nose with aromas of honeysuckle, jasmine, yuzu, bergamot and resin candy. Rather charming.
