“Dario Prinčič is one of the “orange” masters of Oslavija (Friuli region), a true pioneer of natural wine. “Jakot” is a 100% Friulan grape (whose old name “Tokaj” was banned, so Dario turned it upside down). The grapes are grown biodynamically, and the wine is made archaically: it is macerated (stored) with the skins in open wooden barrels for about 20-22 days. The wine is then slowly aged in old oak barrels, unfiltered and bottled with a minimum amount of sulfites.
Taste? The wine is dry, elegant and incredibly complex. It is dominated by notes of dried fruit (apricots), candied ginger, wild herbs (hay) and nuts. Due to contact with the skins, it has a great texture (soft tannins) and a long, deep, mineral and salty aftertaste.
How to serve? Important: Serve not too cold (around 12-15 °C) to reveal its aromas. Due to its structure, this is an excellent gastronomic wine. Pair with mature cheeses, cured meats (prosciutto), poultry or even pasta with mushroom sauce.”
