This is a rare, long-aged Sicilian masterpiece. Alessandro Viola FU Rosé is a rosé sparkling wine made using the traditional (Champenoise) method from 100% Nerello Mascalese grapes grown organically on limestone soil in Sicily. The uniqueness of this wine lies in the fact that it is aged for 100 months (over 8 years) with yeast in the bottle. The wine is “Pas Dosé” – completely dry, with no added sugar and bottled without filtration.
The taste? The wine is completely dry, complex, and incredibly elegant. The long aging gives it notes of toasted bread (brioche), dried fruit, and nuts, which intertwine with the red berry (cherry, strawberry) and mineral flavors characteristic of Nerello Mascalese. There is incredible depth and an elegant, long-lasting mousse structure.
How to serve? Serve chilled (around 10-12 °C) in a wine glass. This is a meditative, gastronomic sparkling wine for special occasions. Pair with aged cheeses, roasted poultry, or even fish dishes.
