Description

Jean-Pierre Robinot is a true legend in the world of natural wine from the Loire Valley (France). Bistrologie is his tribute to Parisian bistro culture: an unpretentious but distinctive wine. It is made from 100% Chenin Blanc grapes purchased from biodynamic vineyards. Like all Robinot wines, it is produced in a completely natural way: fermented in old oak barrels, unfiltered and without any added sulfites.

The taste? The wine is dry, electrifying, and full of energy. It is dominated by notes of citrus fruits (lemon, grapefruit) and green apples, complemented by a distinct “wet stone” (minerality) sensation. It is a lively wine with laser-sharp acidity that invites you to take another sip.

How to serve? Serve well chilled (around 8–10 °C). It is the perfect aperitif. Due to its bright acidity, it pairs perfectly with seafood (especially oysters), light fish dishes, or goat cheese.
