Description

Cumparone is a red wine from the Abbazia San Giorgio estate on the volcanic island of Pantelleria. Although Nerello Mascalese is most commonly associated with Etna, here it is grown biodynamically and organically on volcanic soil, giving it the unique saltiness of Pantelleria. The wine is fermented spontaneously with the skins for about 20 days and aged for 12 months in steel tanks to maintain maximum freshness. The wine is bottled without added sulfites.

The taste? The wine is dry, juicy, and elegant. It is dominated by bright red berries (pomegranates, red currants, raspberries) and notes of sea breeze and iodine. It is light-medium bodied, with refreshing acidity and soft but defined tannins and a long-lasting salty minerality.

How to serve? Serve chilled (around 16–18 °C). This is an excellent wine to accompany Sicilian appetizers (salumi), pasta with light sauces, white meat or vegetable stews.
