Manel Aviñó, also known as “The Bubble Man,” is widely regarded as Catalonia’s leading producer of sparkling wines. Together with his brother Joan Aviñó, he took over their family farm, Can Ramón viticulture del Montgròs del Penedès, located in the Parc del Garraf (natural park) municipality of Sant Pere de Ribes. They began winemaking in 2001 with the goal of preserving the winery’s history of producing cava the old-fashioned way by respecting biodynamics, following the lunar calendar, and not using harmful chemicals in the vineyards. Manel is the 10th generation to work on the family farm; some of the vineyards were planted by his ancestors in the 14th century. The focus is on preserving heritage and the traditional winemaking process, making honest wines from the local varietals grown there. Nuria Aviñó, Manel’s daughter, is also following in her family’s footsteps and has become the youngest winemaker in their portfolio, using the ancestral method to make wine.
