Description

Cle à molette (lit. “adjustable wrench”) is another playful wine from natural wine maker Alice Bouvot of L’Octavin. Although Alice is based in the Jura region, this wine is made from Chardonnay grapes that she bought from her friend’s biodynamic farm (Domaine de la Loue). It is a 100% natural wine – unfiltered, unrefined and, of course, without any added sulfites.

The taste? The wine is dry, complex and has the character typical of the Jura region. It is dominated by notes of green apples and citrus fruits (lemon zest), complemented by nuts (almonds, walnuts) and a light spice aroma resulting from aging. The finish is long, with fantastic minerality and salinity.

How to serve? Serve chilled (around 10-12°C) to reveal its complexity. This is a serious gastronomic wine. It pairs perfectly with hard cheeses (especially Comté), roast chicken or dishes with mushroom sauce.
