Description

Céline Coté is a small, independent winemaker in Burgundy, renowned for her organic and biodynamic philosophy. This Chardonnay comes from vineyards in the Tonnerre region (northern Burgundy, near Chablis), which is famous for its clay and limestone soil. This wine is unique because part of it is aged in old oak barrels (barriques) and the rest in steel tanks. The oak adds depth, while the steel aging preserves the necessary freshness.

The taste? The wine is dry, aromatic, and rich. It is dominated by notes of ripe pears and citrus fruits, which blend with subtle hints of vanilla and nuts (from the oak). The wine is slightly creamy (from aging with yeast) and perfectly balanced with bright, mineral acidity.

How to serve? Serve chilled (around 10–12 °C). This is an excellent gastronomic wine. Pair with fatty fish (e.g., salmon, tuna), white meat with sauce, or soft cheeses.
