“This sparkling wine is an example of the craftsmanship of The Bubbleman (Manel Avinyó). Clos Lentiscus is a biodynamic farm in Catalonia, and this wine is a Blanc de Noirs (White of Blacks) made from the red Sumoll grape. The sparkling of this wine is most unique: instead of the usual sugar (liqueur de tirage), the second fermentation in the bottle was carried out using honey from the biodynamic farm. The wine was aged with yeast for about 30 months and bottled as Brut Nature (absolutely dry, no added sugar) and without any added sulfites.
Taste? The wine is completely dry, structured and full of energy. It is dominated by sour red berries (cranberries, cherries) and toasted bread (brioche). Although there is no added sugar, the honey gives a subtle floral aroma and complexity. The aftertaste is long, with the characteristic sea salt (saltiness) and minerality of the Garraf region.
How to serve? Serve chilled (around 8-10°C) in a wine glass. This is a great gastronomic sparkling wine. Due to its structure and saltiness, it is ideal with charcuterie, grilled poultry or nutty cheese.”
