“This sparkling wine is Sicily’s answer to Champagne! Alessandro Viola is a natural wine guru from Alcamo, Sicily. This Blanc de Blancs is made from 100% local Catarratto grapes using the traditional method (as in Champagne). The wine is aged with yeast for at least 20 months and bottled as Pas Dosé – completely dry, without any added sugar (dosage).
The taste? The wine is completely dry, lively, and incredibly elegant. It combines the freshness of Chenin Blanc with Sicilian character. There are notes of citrus fruits (lemon, zest), herbs (sage, rosemary), and nuts (almonds). Long aging with yeast gives it a subtle aroma of toasted bread, and the aftertaste has a distinct saltiness and minerality.
How to serve? Serve well chilled (around 8–10 °C) in a wine glass. It is the perfect aperitif for a special occasion. Its dryness and saltiness make it an ideal accompaniment to seafood (oysters, crab), baked fish or cheese.
