Bigotes

Frédéric Cossard – the legend of natural wine from Burgundy. “Bigotes” (lit. “Mustache”) is his simplest, yet incredibly pure Chardonnay, made from grapes grown on clay and limestone soils near the prestigious village of Puligny-Montrachet. Cossard crafts his wines without any added sulfites, and this wine is aged in concrete eggs (instead of oak) to ensure maximum minerality and purity.

Taste? The wine is dry, crisp, and marked by astonishing precision. It’s dominated by fresh apples, citrus peel, and a pronounced saltiness and minerality (reminiscent of wet stone). This is a stylish and subtle Chardonnay that reveals a balance between fruitiness, texture, and freshness.

How to serve? Serve chilled (around10–12°C). An excellent food wine. Pair with roasted poultry, richer fish, seafood, or goat cheese.
